1 Large Sweet Potato (peeled and cut into large pieces) 1 Small Onion (cut into large pieces) 2 1/2 Cups Water 1 Cup Plant Milk (I used plain oat milk) 1 Tablespoon Lemon Juice 1 teaspoon Garlic Powder 1/2 Teaspoon Paprika Salt and Pepper to taste
In a medium pot add the vegetables and bring the water to a boil. Cook until potatoes are fork tender.
Remove the sweet potato and onion from the pot and place into a blender. Reserve the water. Add the remaining ingredients to the blender and purée. Add a 1/4 cup of the reserved sweet potato and onion water to thin out the purée. If you would like it thinner, add more a tablespoon at a time.
Toss the mix with pasta of your choice. Add 1/2 teaspoon chili powder if you’d like a nacho flavor. 1/4 teaspoon cayenne pepper will add some spice. Play with the flavors as you see fit!
